Recipe Notes: Added water to compensate for the hops sucking it up and boiloff. Note: Use IBUs not weight of hops. I adjusted these for the hop age. Not to style as it is too highly hopped. Then again I'm not always conforming to style. Too many Belgian beers have ruined me. If you don't want the Acid malt, sub MO or 2row. The whirloc and nutrient are one each. I couldn't figure out how to make it an each UOM. The name is my son's input. He's really into dinosaurs, or was at the time I made this.
Tasting Notes: Very strong hop nose and flavor. Head is huge and long lasting. Lots of lace on the glass. I get a bit of onion from the summit hops. I love it with Cajun food.
